Pesto Egg Muffins
Tasty protein packed way to start the day. These simple egg muffins hit the spot!

- 2 Eggs
- 2 Cherry tomatoes, chopped
- Small Handful of spinach, shredded
- 1 tsp Pesto
Preheat the oven to 180°C.
In a muffin pan, lightly spray.2 of the holes with oil
Whisk the eggs with salt and pepper
Add the egg mixture halfway up the space in the muffin tin
Add one chopped tomato and some shredded spinach to each muffin. Add approx 1/2 tsp of pesto to each muffin as well
Cook in the oven for about 20-25 minutes
Serve and enjoy!
