Pesto Egg Muffins

Tasty protein packed way to start the day. These simple egg muffins hit the spot!

Equipment

  • 1 Muffin tin
  • 1 Bowl

Ingredients
  

  • 2 Eggs
  • 2 Cherry tomatoes, chopped
  • Small Handful of spinach, shredded
  • 1 tsp Pesto

Instructions
 

  • Preheat the oven to 180°C.
  • In a muffin pan, lightly spray.2 of the holes with oil
  • Whisk the eggs with salt and pepper
  • Add the egg mixture halfway up the space in the muffin tin
  • Add one chopped tomato and some shredded spinach to each muffin. Add approx 1/2 tsp of pesto to each muffin as well
  • Cook in the oven for about 20-25 minutes
  • Serve and enjoy!
