Ingredients
  

  • 1 Cauliflower (medium size)
  • 1 400g tin Black beans, rinsed and drained
  • 1/2 Avocado
  • 4 Tomatoes
  • 1/2 tspn Ground Cumin
  • 1/2 tspn Ground Coriander
  • 1/2 tspn Paprika
  • 1 tbsp Olive Oil
  • 1 200g can Sweet Corn

Instructions
 

  • Place the cauliflower in a food processor to whizz into a rice like texture. Alternatively grate the cauliflower using the coarse side of a hand held grater.
  • Add the rice to a non-stick frying pan with a little olive oil for about 5 minutes to warm through.
  • In a bowl mix the cooked cauliflower with the spices and season to taste with salt and pepper.
  • Divide the cauliflower between 2 bowls and top with the black beans, sweetcorn, sliced avocado and chopped tomatoes. Garnish with fresh coriander and a wedge of lime.
