Feta, egg and spinach scramble

Feta, spinach and egg scramble will keep you feeling full until lunchtime and is packed with protein and antioxidants. It's also quick to make!

  • Frying pan

Ingredients
  

  • 2 Handfuls of spinach
  • 2 Large eggs
  • 75 g Feta cheese, crumbled
  • Salt & pepper, herbs of choice

Instructions
 

  • Add small amount of olive oil to a frying pan, add the spinach and wilt for 2-3 minutes
  • Drain any excess water from the pan, before added whisked eggs seasoned with salt and pepper
  • Add the crumbled feta and using a fork, mix aka scramble!
  • Sprinkle with your herb of choice, serve and enjoy!
