Feta, egg and spinach scramble
Feta, spinach and egg scramble will keep you feeling full until lunchtime and is packed with protein and antioxidants. It's also quick to make!

- 2 Handfuls of spinach
- 2 Large eggs
- 75 g Feta cheese, crumbled
- Salt & pepper, herbs of choice
Add small amount of olive oil to a frying pan, add the spinach and wilt for 2-3 minutes
Drain any excess water from the pan, before added whisked eggs seasoned with salt and pepper
Add the crumbled feta and using a fork, mix aka scramble!
Sprinkle with your herb of choice, serve and enjoy!
