Carrot and ginger soup

A healthy warming winter winner! Simple and it feels healthy when you eat it! Dive in!

Ingredients
  

  • 1/2 Small onion, finely chopped
  • 4 Medium carrots, peeled and sliced
  • 1 tspn Ginger, peeled and cut into shards
  • Olive oil
  • 250 ml Chicken stock
  • Pumpkin seeds - handful

Instructions
 

  • Add a dash of olive oil to a saucepan, add the onions and cook gently for 5 minutes
  • Add the carrots, ginger and chicken stock and bring to the boil. Cover the pan and simmer for about 20 minutes
  • Once the carrot is soft, cool slightly then blend until smooth
  • Serve and sprinkle with a handful of pumpkin seeds
