Bean, Pea & Feta Salad

Packed with fibre and freshness - this is a great salad with a crusty piece of bread. Enjoy!

Ingredients
  

  • 100 g green beans
  • 100 g sugar snap peas
  • 100 g asparagus tips
  • 2 spring onions, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp dijon mustard
  • 1/2 tbsp honey
  • 1/2 tbsp red wine vinegar
  • Handful pistacchio nuts
  • 40 g crumbled feta

Instructions
 

  • Steam the vegetables for a few minutes until they are just cooked
  • Combine oil, vinegar, honey, mustard with salt and pepper in a jam jar and shake - to make the dressing⁠
  • Add the spring onion, nuts to the vegetables and toss with the dressing⁠
  • Serve with the crumbled feta and enjoy! ⁠
