Bean, Pea & Feta Salad

- 100 g green beans
- 100 g sugar snap peas
- 100 g asparagus tips
- 2 spring onions, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp dijon mustard
- 1/2 tbsp honey
- 1/2 tbsp red wine vinegar
- Handful pistacchio nuts
- 40 g crumbled feta
Steam the vegetables for a few minutes until they are just cooked
Combine oil, vinegar, honey, mustard with salt and pepper in a jam jar and shake - to make the dressing
Add the spring onion, nuts to the vegetables and toss with the dressing
Serve with the crumbled feta and enjoy!
