Feta, Egg & Spinach Scramble

Feta, egg & spinach scramble is tasty and guaranteed to keep you feeling full until lunchtime. It takes 5 minutes to whizz up.  And is packed full of protein, antioxidants and nutrients to start your day healthily.

It’s also hot which for me is great as the colder months approach AND it’s a change from porridge!

Spinach health benefits

Spinach belongs to the same family as chard and beets and shares a similar taste profile with them. There are 3 different types of spinach. Savoy has crisp, creased dark green leaves whilst the semi-savoy variety whilst similar in texture to the savoy has less crinkly leaves. The smooth leaf variety is the most common and has flat, unwrinkled, ‘spade-shaped’ leaves. 

Spinach has cultivated a bit of a reputation for its potential health benefits – remember it was alleged to be the source of Popeye’s strength! There are however good reasons for this reputation. Spinach contains twice as much iron as other greens which supports energy, vitality and assists with the quality of blood. 

Spinach – low in calories

A single cup of spinach has only 41 calories yet is extremely nutrient-dense. it is an excellent source of Vitamin K, carotenes, Vitamin C and folic acid. It is also a very good source of the chemical elements manganese, magnesium and iron. 

Spinach is the most alkaline-producing food which helps regulate and support the body pH and is one of the richest dietary sources of lutein which promotes healthy eye-sight and prevents macular degeneration and cataracts.

Like other chlorophyll and carotene containing vegetables, spinach is a strong protector against cancer. Research has shown that spinach extracts have slowed cell division in human stomach cancer cells. Studies have also shown the higher the intake of spinach the lower the incidence of breast cancer.

Egg Health Benefits

Eggs are a very good, low-cost source of high-quality protein. Some people worry about their impact on cholesterol, there is evidence that eggs lower cholesterol levels as it is saturated fat that impacts the cholesterol levels more than the level of dietary fat. 

Eggs are rich in several nutrients that promote heart health. Betaine can reduce levels of homocysteine which can damage the blood vessel walls. Elevated levels of homocysteine have also been linked to osteoporosis, cancer and Alzheimer’s disease. 

Eggs also contain choline which is a component of many fat-containing structures in cell membranes that provide flexibility and structural integrity to cells. 

In traditional Chinese medicine, eggs are recommended to strengthen your blood and energy by enhancing the function of the digestive system and kidneys.

Feta, egg and spinach scramble

Feta, spinach and egg scramble will keep you feeling full until lunchtime and is packed with protein and antioxidants. It's also quick to make!

  • Frying pan
  • 2 Handfuls of spinach
  • 2 Large eggs
  • 75 g Feta cheese, crumbled
  • Salt & pepper, herbs of choice
  1. Add small amount of olive oil to a frying pan, add the spinach and wilt for 2-3 minutes

  2. Drain any excess water from the pan, before added whisked eggs seasoned with salt and pepper

  3. Add the crumbled feta and using a fork, mix aka scramble!

  4. Sprinkle with your herb of choice, serve and enjoy!
