Healthy cauliflower rice burrito bowl recipe
Healthy, easy and delicious cauliflower rice burrito bowls pack a punch
- Frying pan
- Grater
- Food processor
- 1 Cauliflower (medium size)
- 1 400g tin Black beans, rinsed and drained
- 1/2 Avocado
- 4 Tomatoes
- 1/2 tspn Ground Cumin
- 1/2 tspn Ground Coriander
- 1/2 tspn Paprika
- 1 tbsp Olive Oil
- 1 200g can Sweet Corn

Place the cauliflower in a food processor to whizz into a rice like texture. Alternatively grate the cauliflower using the coarse side of a hand held grater.

Add the rice to a non-stick frying pan with a little olive oil for about 5 minutes to warm through.

In a bowl mix the cooked cauliflower with the spices and season to taste with salt and pepper.

Divide the cauliflower between 2 bowls and top with the black beans, sweetcorn, sliced avocado and chopped tomatoes. Garnish with fresh coriander and a wedge of lime.
If you wish to add some crunch to the dish, add a handful of nuts such as cashews or almonds.
