Carrot and ginger soup – a healthy, winter warming. So easy and like a hug in a bowl when you eat it! Give it a go – I promise you’ll want to make it again and again! As it’s blended it tastes creamy and delicious but with no cream, it’s a real healthy winner!

Carrots are packed full of healthy nutrients including antioxidants which protect against cardiovascular disease and cancers. They also include vitamin A which supports good vision, especially at night. Vitamin A is also good for healthy skin and hair and as they are a good source of fibre they’ll keep your digestive system going. With them also being selenium-rich, they protect against the impact of heavy metals and other toxic substances.
Ginger health benefits
Ginger is a great anti-inflammatory agent and always something I reach for when I’m feeling a little under the weather.
It also promotes relief from digestive stress as it is an excellent carminative which promotes the elimination of intestinal wind and soothes the intestinal tract.
Ginger can also reduce symptoms associated with motion sickness, whether car, plane, train or boat trips. This is done by affecting the gastrointestinal tract and slowing the feedback loop between the stomach and the nausea centre in the brain.
It can also reduce the pain associated with osteoarthritis due to gingerols which inhibit the formation of inflammatory cytokines, chemical messengers of the immune system.

Carrot and ginger soup
A healthy warming winter winner! Simple and it feels healthy when you eat it! Dive in!
- Saucepan
- Blender
- 1/2 Small onion, finely chopped
- 4 Medium carrots, peeled and sliced
- 1 tspn Ginger, peeled and cut into shards
- Olive oil
- 250 ml Chicken stock
- Pumpkin seeds – handful

Add a dash of olive oil to a saucepan, add the onions and cook gently for 5 minutes

Add the carrots, ginger and chicken stock and bring to the boil. Cover the pan and simmer for about 20 minutes

Once the carrot is soft, cool slightly then blend until smooth

Serve and sprinkle with a handful of pumpkin seeds
