Broccoli pasta

Time for a quick, delicious and creamy tasting broccoli pasta dish! Broccoli pasta! I made this in 10 minutes – a great meal when you’re craving something hot and filling. It’s another great way to increase your vegetable intake – good if you’ve decided to cut down your meat in January or looking for interesting vegetable-based meals to add to your diet. Try this out – I did and it’s on my list to make again……

Broccoli Health Benefits

Broccoli is a member of the cabbage family and whilst low in calories is one of the most nutrient-dense foods. Interesting fact – a cup of broccoli provides the same amount of protein as a cup of rice but less than one-third of the number of calories! Time to consider swapping more rice for broccoli – you can see why things like cauliflower rice have become so popular……

Broccoli is more versatile than you think – as well as this pasta dish it’s also great raw in salads, steamed as a side dish, versatile in stir-fries. 

Broccoli is full of Vitamins K, C and A as well as folic acid and fibre. These nutrients are great for overall health, good digestion and folic acid support pregnancy.

It’s a good source of potassium. Potassium is required to convert blood sugar into glycogen. Lower levels of glycogen mean muscles have less energy and so a deficiency can cause tiredness and muscle weakness.  

Broccoli also contains glucosinolates, phytochemicals where research has shown these compounds have anti-cancer properties. 

The recipe for broccoli pasta is below – give it a try! Truly yummy!

Broccoli pasta

Quick, tasty and so delicious. 10 minutes and it's done!

  • Saucepans
  • Blender
  • 2 Heads Broccoli – use the florets and the stalks
  • 1 Cup Pasta – I used wholemeal spaghetti
  • 1/4 Cup Nut milk of your choice – I used almond
  • Salt, black pepper, sliced chilli, parmesan to taste
  • 2 tbsp Olive oil
  1. Add the broccoli florets and the chopped up stalk to a pan of boiling water to cook through. You can steam if you prefer

  2. Cook the pasta accordingly to the instructions

  3. Once the broccoli is cooked, add to a blender with the milk, salt and pepper, olive oil and blend to a creamy texture.

  4. Add the broccoli mix to the cooked pasta (once it has been drained reserving a little of the cooking liquid to add to the pasta/broccoli mix to make it extra tasty!)

  5. Serve with sliced chilli (I like the kick of it) and parmesan shavings. Enjoy!
