Asparagus is low in calories and carbohydrates and compared with other vegetables it is relatively rich in protein. It has been used as a treatment of arthritis and rheumatism as well as a diuretic. Here, the side effect is interesting smelling urine! It is thought to provide arthritis support due to its antioxidants and anti-inflammatory properties. It is also an excellent source of potassium, Vitamins K, C and A and folic acid.

Bean, Pea & Feta Salad
Packed with fibre and freshness – this is a great salad with a crusty piece of bread. Enjoy!
- Steamer
- Bowl
- 100 g green beans
- 100 g sugar snap peas
- 100 g asparagus tips
- 2 spring onions, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp dijon mustard
- 1/2 tbsp honey
- 1/2 tbsp red wine vinegar
- Handful pistacchio nuts
- 40 g crumbled feta

Steam the vegetables for a few minutes until they are just cooked

Combine oil, vinegar, honey, mustard with salt and pepper in a jam jar and shake – to make the dressing

Add the spring onion, nuts to the vegetables and toss with the dressing

Serve with the crumbled feta and enjoy!
