Peppers are native to Central and South America. They are available in several colours: green and purpose peppers have a slightly bitter flavour while red, orange and yellow peppers are sweeter.
Red peppers are green peppers that have been allowed to ripen and so they are much sweeter. The spices paprika and pimento are both prepared from red peppers.
Red peppers have significantly higher levels of nutrients than green pepper so if possible, go red!
Red peppers are great in many different ways. Stuffed with other vegetables and rice, in a fabulous sumptuous ratatouille with tomatoes and loads of garlic, raw in a salad or great with stews. Such choice!

- They offer a protective effect against cataracts, probably due to their high Vitamin C and beta-carotene content.
- Reduce the risk of heart attacks and the prevention of blood clots as they contain flavonoids, capsaicin and vitamin C. Here, they are not a good as chilli peppers but still a good choice if you are looking to reduce your cholesterol levels.
- A very good source of phytochemicals, including coumaric acid and chlorogenic acid. Coumaric acid has been shown to reduce inflammation in the body.
