This week, it’s peas health benefits from Kat’s Kitchen.
Peas are often overlooked but they’re a great addition to many dishes. I always have a packet of frozen peas in the freezer and as they are frozen as soon as they are picked all their nutrients are preserved.
Peas come in 3 major types – garden, mangetout (snow) and sugar snap. The pods of both mangetout and sugar snap peas are edible with both having a slightly sweeter taste than garden peas.
Peas are originally thought to have come from the region that spans the Middle East to Central Asia. These days, approximately 80% of the world’s crop is utilised as dried peas rather than fresh.
Peas are great in salads, added to dried peas in a soup, and mangetout/sugar snaps are great as a snack due to their portability.
Peas Health Benefits
Here are a few nutritional reasons to encourage you to include more peas in your diet:
- Green peas are a good source of vitamin C, vitamin K and carotenes. Vitamin K is important for blood clotting
- Vitamin K1 plays an important role in bone health as it converts the inactive form of the bone protein osteocalcin into its active form.
- Carotenes are antioxidants, and in particular, peas contain lycopene which is important in protecting against macular degeneration.
