Breakfast! Eggs and greens is a great way to start the day, full of nutrients and helps you feel fuller for longer – it will keep you going until lunch! I’ve made this a few times and loved it every time – it looks healthy and is good for your insides as well!
Egg Health Benefits
Eggs are amazing to cook with (flax seeds with water is an alternative for non-egg eaters) as they form the glue of many important baking reactions such as foaming, the ability of things to go brown, and emulsification which makes mayonnaise what it is.
People have been enjoying eggs for thousands of years and in many forms. In this recipe they are fried, but they are equally good boiled, scrambled or poached.
Eggs are an excellent source of Vitamin K which supports blood health and blood clotting. They are also a great source of protein to build and repair muscles.
Eggs are a rich source of choline to support flexible cell membranes and brain function. They promote good heart health as they include betaine which can help prevent damage to blood vessels.
Eggs are great with so many things – and this eggs and greens recipe shows that point!
Avocado Health Benefits
Avocados are great to include in your diet. They are high in unsaturated fatty acids and potassium – an avocado has the potassium content of 2-3 bananas. Potassium is important for the effective operation of the sodium-potassium pump which prevents cells from swelling up in the body.
They also contain oleic and linoleic acid which support lower cholesterol levels and increase the levels of the health HDL cholesterol.
