Cucumber Health Benefits

This week, it’s cucumber health benefits at Kat’s Kitchen as I share the health benefits of different foods. Although cucumbers are often viewed as a Spring/Summer vegetable they are great all year around. I’ve even had them cooked, having taken out the seeds first  – effectively cooked a bit like a stuffed marrow!   If you can leave the skin on when you eat them, do so, as many of the nutrients are in the skin.

Cucumber health benefits

I love cucumbers, especially in salads. Their crunch and fresh tastes remind me of warm and sunny days. Originally from Southeast Asia, in the past, they have been used not only as food but for their beneficial skin-healing properties. 

Why include cucumbers in your diet? 

Here are a few nutritional reasons to encourage you to include cucumbers regularly in your diet:

  • Cucumbers (their skin) are an excellent source of silica – this supports the strength of the connective tissue which holds our bodies together. Tendons, muscles, ligaments, cartilage and bone all need silica.
  • Cucumber contains ascorbic acid and caffeic acid which help to prevent water retention and explains the reason why cucumbers are used to rescue the swelling under the eyes and are used for sunburn.
