It’s a biennial vegetable which means that it has a normal growth cycle of every 2 years. Usually, the stalks are eaten but the leaves, roots and seeds are often used as food.
Celery grows to about 12-16 inches in height. The stalks have a crunchy texture and a delicate taste – some palettes can find it slightly salty.
Modern celery originated from wild celery which was native to the Mediterranean. The Ancient Greeks used the leaves as laurels to decorate their renowned athletes, while the ancient Romans used celery as a seasoning.b
