Cauliflower is a member of the cruciferous vegetable family which includes kale, broccoli and cabbage. The cauliflower head is called a ‘curd’ which is composed of undeveloped flower buds. The flower buds are attached to a central stalk and when the buds bloom, the cauliflower looks like a little tree!
Cauliflower remains white because its ribbed coarse green leaves protect the curd from sunlight, thereby impeding the development of chlorophyll. It can also be found in light green and purple colours.
Cauliflower is thought to have originated from ancient Asia with the current version appearing in Turkey/Italy around 600 BCE.
Although not as nutrient-dense as many of the other cabbage family vegetables cauliflower still packs a punch in the nutrition stakes. Here are some reasons to include cauliflower in your diet:
