Rhubarb is native to Central Asia and its medicinal qualities go back over five thousand years. It was used in China then and also among Arabs, Greeks and Romans in ancient times.
Rhubarb is the fleshy edible stalks that are cooked and used for food. The large triangular leaves contain high levels of oxalic acid and anthrone glycosides which make them inedible. Rhubarb is actually a vegetable but is often thought of as a fruit! The pale pink stalks can be eaten raw where they have a crisp texture but are most commonly cooked with sugar and used in pies, crumbles and other desserts. Raw rhubarb can have a strong tart taste!
