This week, it’s Aubergine Health Benefits from Kat’s Kitchen. Aubergines are also called eggplants due to their egg like shape! Aubergines are members of the nightshade family like tomatoes and potatoes.
In addition to the classic purple colour, aubergines are also lavender, jade green, orange and yellow-white. There are also many different shapes and sizes!
Aubergines feature a lot in Italian cooking and I like to eat them roasted with tomatoes and mozzarella. Delicious!
Aubergines are great in stir-fries and bulk up stews/soups. The dip, baba ganoush is a mix of aubergine, garlic, tahini, lemon juice and olive oil – great for dipping with pitta bread! Aubergines also lend themselves to being stuffed! Fill them with a mixture of feta, pine nuts and roasted peppers for a taste of Greece.

- Nasunin, a potent antioxidant found in the skin of aubergines. This has been shown to protect cell membranes from damage which in turn prevents cell damage by free radicals
- Nasunin also helps move excess iron out of the body. Excess iron is associated with heart disease and cancer
- Lower cholesterol levels due not only to nasunin but other phytochemicals which are known as terpenes.
