Asparagus Health Benefits

This week, it’s asparagus health benefits from Kat’s Kitchen. 

For me, asparagus means Spring has arrived. And,  to celebrate I’ve shared my asparagus and broccoli egg muffin recipe this week. Check it out – it’s Spring in a mouthful!

Asparagus is from the Mediterranean and a member of the lily family. There are over 300 varieties of which about 30 are edible. 

It’s usually green or purplish but white asparagus is also available. 

Asparagus is very versatile. It is often steamed and served with a slice of lemon and a mayonnaise or hollandaise sauce. It’s also great BBQ’d, served with pasta, stir-fried or added to an omelette.  

Asparagus Health Benefits

Here are a few nutritional reasons to include asparagus in your diet:

  • Asparagus is low in calories and carbohydrates.  It’s relatively rich in protein compared with other vegetables. 
  • It has been used as a treatment of arthritis and rheumatism as well as a diuretic. Here, the side effect is interesting smelling urine! 
  • Arthritis support is thought to come from its antioxidants and anti-inflammatory properties 
  • It’s an excellent source of potassium, Vitamins K, C and A and folic acid.
