These matcha green tea pancakes are a nod to St Patrick’s Day. They are easy to make, delicious as well as being healthy due to the matcha green tea powder. The green tea powder also gives them their fabulous green colour for St Patrick’s Day!
When I visited Japan matcha green tea was everywhere. The choices were endless and I’ve been a fan ever since. The Japanese use matcha green tea powder in all sorts of recipes and in particular, cakes, desserts and ice cream. Matcha Green Tea – Health Benefits
Matcha green tea powder is rich in catechins which act as a natural antioxidant. Antioxidants help stabilise harmful free radical compounds which can damage cells and cause chronic disease.
When making a cup of tea try to use matcha green tea powder rather than matcha green tea leaves. This is because the powder form contains more catechins and so is better for you.
These matcha green tea pancakes are simple, tasty and great with strawberries, blueberries or nuts of your choice. Serve with a dollop of yoghurt
Ingredients – for 2
- 2 eggs
- 2 tbsp of matcha green powder
- 2/3 cup almond milk
- 1/4 cup vegetable oil
- 1/4 cup castor sugar
- 1 cup plain flour
- 1 tbsp baking powder
- 1 tsp vanilla extract
Method
- In a bowl, whisk together the eggs, milk, oil, sugar and vanilla extract.
- Add the dry ingredients – flour, baking powder and matcha green powder. Watch the mixture change to a great green colour!
- With the mixture ready, warm a pan, brushing with low-fat oil or a bit of butter
- Add the mixture to the pan in small quantities, and flip once they start to bubble on one side.
- Stack a couple of pancakes on top of each other, serve with the nuts, fruit and yoghurt of your choice.
- Dig in and enjoy!
