This week, it’s button mushroom health benefits from Kat’s Kitchen. I use lots of mushrooms in dishes – particularly in stir-fries. They are also great with onions added to a tomato sauce or with stalks removed, stuffed with diced vegetables, breadcrumbs and topped with cheese before grilling.

Ancient Egyptians believed mushrooms possessed the keys to immortality and so decrees were issued that only Pharaohs could have access to them! Ancient Romans also called them the food of the gods. These days the 3 types of button mushrooms (white, brown and portobello) are much more readily available for everyone!

Here are a few nutritional reasons to encourage you to include more button mushrooms in your diet:
- White button mushrooms are an excellent source of many minerals including selenium, copper, potassium and zinc. Zinc is a component of more than 200 enzymes in the body and a deficiency can be linked to a greater susceptibility to infection.
- Good sources of vitamins B6 and B12. Vitamin B6, also known as pyridoxine, is involved in the formation of body proteins and chemical transmitters in the nervous system. It also helps with maintaining a proper immune system.
