Healthy Broccoli Salad (& No Cooking!)

This quick and easy recipe for a healthy broccoli salad comes courtesy of my friend Jo and I instantly fell in love with it! I made mine with a honey and mustard dressing, but you could use mayonnaise or something else if you wish. Therefore, anything probably goes! 

Healthy broccoli salad – great on its own or as a side

This recipe is super easy to make and involves no cooking. Served as a side it gives a fresh and lighter feel to dishes such as a steamed piece of fish or grilled chicken breast. Easy peasy!

Healthy and easy

Broccoli, like the other members of the cabbage family, demonstrate anticancer effects, particularly in breast cancer. It contains compounds known as glucosinolates which increase the excretion of oestrogen from the body. 

Broccoli is also a rich source of lutein which has also shown anticancer effects. Here, it may help prevent the development of age-related macular degeneration 

Ingredients

  • I head of broccoli and stalk, cut up into small pieces
  • A handful of pumpkin seeds
  • A handful of sultanas – pre-soaked in water for a few minutes to let them swell up a little
  • 1/2 red onion finely chopped – a shallot will give a milder flavour if you prefer
  • For the dressing – 3 tbsp olive oil, 1 tbsp white wine vinegar, a drizzle of honey, 1 tsp of mustard, salt and pepper

Method 

  1. Place the dressing ingredients in a jam jar and shake. Set aside
  2. In another bowl, assemble the other ingredients then pour over the dressing and mix
  3. Serve and enjoy!
