Broccoli is a member of the cabbage family and whilst low in calories is one of the most nutrient dense foods. Interesting fact – a cup of broccoli provides the same amount of protein as a cup of rice but less than one third of the amount of calories!
It’s great raw in salads, steamed as a side dish, versatile in stir fries…….I enjoy it steamed with a piece of fish…..
Broccoli health benefits
Here’s a few reasons to encourage you to include broccoli regularly in your diet.
- Full of Vitamins K, C and A as well as folic acid and fibre. These nutrients are great for overall health, good digestion and folic acid supports pregnancy.
- Good source of potassium – potassium is required to convert blood sugar into glycogen. Lower levels of glycogen means muscles have less energy and so a deficiency can cause tiredness and muscle weakness.
- Contains glucosinolates, phytochemicals with research showing these have anticancer properties.
