Welcome to my new regular feature of what’s in my fridge and why. A nutritional round up of everyday foods.
Carrots are packed with nutrients and tend to be low air miles. They are versatile whether raw in salads or with a dip such as hummus, great in stews or soups, steamed or roasted. I could go on!
Carrot Health Benefits
Here’s a few reasons to encourage you to include carrots regularly in your diet.
- Full of antioxidants – protect against cardiovascular disease and cancers
- Vitamin A which supports good vision, especially night vision. It’s also good for healthy skin and hair.
- Good source of fibre to keep you regularly and also contain selenium which can be hard to source naturally which is thought to protect from the impact of heavy metals and other toxic substances.
